One way is that you can use a new email address with no personal ties, avoid Gmail if possible and consider ProtonMail or Tutanota.
Also, you can register the Discord account with fake information and never reuse emails or usernames from other platforms. When verifying your account for phone verification, use a paid temporary phone service (to get codes you often need paid subscription).

As Slopes said you can use burner email and alias, In addition, you can never use webcam or voice calls, always use a VPN, Limit metadata leaks - don't link external accounts like spotify, xbox, steam, etc and don't upload images that contain metadata (EXIF). You can use a scrubber like EXIFCleaner or mat2 to remove EXIF metadata
